A Delicious and Healthy Dessert

Sometimes eating a healthy dessert can be tough because few treats can really qualify as “good for you”. Here is an exception. This delicious Raw Blueberry Pie is made mostly of berries, nuts and dates and is chalked full of antioxidants. It serves 8 and only has 450 calories, while packed with 36 grams of protein, 8 grams of fiber, 15% of your Vitamin B6 daily intake, 25% of Vitamin C, 35% of Vitamin E, 18% of Calcium and 24% of Iron, along with many other nutritional benefits and vitamins (all numbers for a single serving). Most importantly, the ingredients in the pie are all natural with no synthetic ingredients. To make:

Crust:
1 cup organic raw almonds
1 cup organic raw walnuts
2/3 cup unsweetened shredded coconut
2 cups organic pitted dates
1/2 tsp sea salt
1/2 tsp cinnamon

Blend all together in a food processor until crumbly. Press into a pie pan and place in the freezer for 30 min.

Filling:
4 cups blueberries
1 cup raspberries
1 cup strawberries
1 cup soaked dates (soak dates in water for 10 minutes)
2 tbsp fresh lemon juice
1 tbsp coconut oil

Blend 2 cups blueberries, 1/2 cup raspberries, and a few strawberries in a food processor with lemon juice, dates, and coconut oil. Place the extra blueberries and raspberries over the pie crust to cover the entire surface area with one layer of berries. Pour the blended berry mixture over the fresh berries. Use any extra berries for garnish.

Serve with large dollop of Greek yogurt on top and enjoy a dessert that is both nutritious and delicious!
